Spicy Red Cabbage
Ingredients
1 baking apple, peeled and sliced
1 large onion finely chopped
1oz/25g low fat margarine
2 tablespoons brown sugar
2lb red cabbage, quartered and finely shredded
4 tablespoons red wine vinegar
8 fl oz / 225 ml vegetable stock
1/2 teaspoon salt
2 tablespoons cranberry jelly
a good pinch black pepper
Preparation
Heat the fat in a large saucepan, then add the apple and the onion, cover and
cook for 5 minutes stirring occasionally.
Add the sugar and the cabbage, cover and cook for a further 5 minutes, then add the vinegar and cook for 5 - 7 minutes.
Next, add the stock and salt cooked covered for approximately an 45 minutes stirring occasionally. The cabbage should be tender with a little 'bite' left in it.
Finally to complete the recipe add the cranberry jelly and the pepper and simmer for 15 minutes.
