Preparing Healthy Food

The healthy eating & cooking focussed on preparing and cooking easy to follow, tasty recipes that were generally low in fat and sugar and high in fibre. Each week the group cooked a three course meal, aiming to use produce that was seasonal and low in cost, yet appealing and easy to replicate at home.

Once the cooking was done we sat down to have a communal meal and regularly had topic for discussion. Over the year the topics included: How to achieve a healthy diet and lifestyle, Additives & E numbers, lowering cholesterol, Five a Day,  fats and oils, salt intake and reduction, we watched a video on coronary heart disease and nutrition, produced a pamphlet on reducing fat, learnt how to lead a class and had a quiz at Xmas.

We made pizzas, one with gluten free flour . We used ½ Mozzarella Cheese and different chopped vegetables, peppers tomatoes, mushrooms, onions. The gluten free one was heavier in texture. We were learning about different intolerances

My name is Racheal Blackmore my favourite recipe is Lemon and Pesto Salmon
I found this recipe very easy and quick to make and very tasty and will keep well in the fridge or a few days. 

My name is Bronwen West (Bonnie) My favourite recipe is  Spiced Red Cabbage
The reason I have chosen spiced red cabbage is I like the colour, a rich burgundy, the texture has a bite to it. The flavour is sweet and sour with a spicy edge. It is good for a different Christmas vegetable.

My name is Pam and my favourite recipes are Mexican Leek and Potato Soup and Minestrone Soup:
We have cooked many and varied recipes over the months on the course some from other countries such as Mexico. I have chosen two soup dishes. They are very healthy , using the five portions recommended, and are quick and easy to prepare. I have chosen as my favourite recipes 1 Mexicanleek and potato soup . 2 quick vegetable minestrone soup

My name is Rebecca and my favourite recipes are Banana and Choc Chip Muffins and Ginger Flapjack!
I found the muffins easy to make and the recipe simple to follow.
I have never made flapjacks before. There are lots of oats in them which are full of fibre and both recipes keep well for about 4 - 5 days.
