Ginger Flapjacks

Makes 10 - 12
Ingredients
100g butter
100g soft brown sugar
75g golden syrup
250g medium or coarse oatmeal (porridge oats are suitable)
2 heaped 5ml spoons ground ginger
Preparation
Preheat the oven to 180°C, 350°F, Gas Mark 4.
Melt the butter with the sugar and the syrup in a large heavy saucepan (you will find it easier to measure golden syrup if you put the jar or tin in hot water first).
Stir in the oats and ginger and mix thoroughly. Turn into a shallow, greased 20cm square baking tin and smooth the top with a knife blade.
Bake in the middle of the preheated oven for 20-30 minutes until golden brown
Let it cool for 10 minutes or so before cutting into oblong bars. Only remove from the tin when completely cold.
